Frrrriday Favs

My favorite dip…that my Mom and I developed together, Chipotle dip! Please note that this has nothing to do with Chipotle the food chain.

Ingredients that you will need:

24 oz Sour Cream (not the fat-free stuff)
1 cup Mayo (not the fat-free stuff)
2 chipotle peppers in adobe sauce (usually canned)
1 packet of taco seasoning

Step 1: Chop up chipotle peppers. I toss them into my electric food chopper with a spoonful or sour cream. If you do not have an electric chopper you can do it by hand. Fact: the only thing I ever use my food chopper for is to make chipotle dip 🙂

Step 2: Combine, sour cream, mayo, chopped chipotle peppers and taco seasoning in a large bowl.

Step 3: Move everything to a Tupperware container and refrigerate for 1 hour.

Step 4: Grab your favorite chips, veggies, heck use your finger if you want and dig in!

Questions:

Q: Why not use fat-free sour cream and mayo?
A: Honestly, I have tried and it doesn’t taste the same at all. Pretty much tastes like poo.

Q: Can you taste the mayo?
A: I never think so. But I love mayo!

Q: Is it spicy? How can I make it more or less spicy?
A: Kinda. Make it less spicy by adding more sour cream or just use 1.5 chipotle peppers. Make it more spicy by adding an extra chipotle pepper (3 total), add some of the adobe sauce from your canned chipotle peppers and use spicy taco seasoning.

Q: Why refrigerate for 1 hour?
A: Once it is all combined you are free to eat it. I like to let it sit in the refrigerator and “marinate” a bit.

Q: Will I eat it all in one sitting?
A: You will be tempted to. Share with friends just to be safe.

 Fact: I love sour cream and while making this dip the other day I found 4 open sour cream containers in the fridge. I am not the least bit surprised.
