Hurry and go make this: Pumpkin Cinnamon Roll Sheet Cake

I’m going to be very very serious here. This may be the best pumpkin recipe there is. Not only that it is fairly easy and I messed up twice on it and it still tastes good.

I found the recipe here, surprisingly I didn’t find it on Pinterest. However, I did pin it there later. Notice how my picture look pretty much nothing like what they were supposed to come out as.

The best part about this recipe was you pretty much dump all the ingredients together and bake. Nothing complicated.

Drizzled with butter and brown sugar. Then I swirled it a little to get this look.

I probably should have used a bigger sheet cake pan as the cake was very close to going over.

As it was baking I realized I forgot to put cinnamon in the brown sugar and butter glaze.
So I added it to the top when I took it out of the oven.

You are supposed to top it with icing made of heavy whipping cream and powdered sugar. I forgot to buy heavy whipping cream so I tried to use regular milk instead. It didn’t work though.

Even though I need to use a bigger pan, forgot the cinnamon and added it later and didn’t use an icing it still came out great.

However, I think I should make it one more time just to make it without all the mistakes. And maybe add pecans to the top….

Have you ever messed up a recipe and it still came out really good? I made cookies once and accidentally doubled the butter. The cookies came out really good though still.

  1. I really need to try this….as I love pumpkin and love cinnamon rolls.. I think Im going to have to make that this weekend! Thanks for sharing! Definitely messed up things before and had them turn out okay, those are my favorite because I don’t feel as bad for messing up LOL!

p.S. Bodhi looks so cute in that Jersey….

  2. My wife will go crazy for the recipe.

Just this week I was making chicken teriyaki and put worchestershire sauce in instead of teriyaki (by mistake). I ended up putting teriyaki in it too and it was edible and kind of good. My 2 year old ate all of it, and she’s been a picky eater over the past few months.

  3. It’s funny that you posed this question today. A friend was helping us in the kitchen last night and mis-read a recipe. He added 1 1/3 Cup instead of 1/3 cup and we had to improvise to salvage the meal. That led to a conversation about how that’s sometimes how you stumble upon brilliance!

It also led to a conversation about regional foods and how they’re often the product of chef’s mistakes. Like St. Louis, where a chef thought you were supposed to deep fry ravioli, as you do an egg roll/samosa/empanada… and now the city is famous for its toasted ravioli! There’s a similar story about a chef error with a cake ratio and the “invention” of gooey butter cake.

I don’t think I’d like the addition of the icing, so your “mistake” works for me!
